Indian Red Curry
1 lb bonless cut up boneless chicken; breast and thigh meat
1 tablespoon butter
1 tablespoon curry powder
1/2 teaspoon cumin
dash cinnamon, cardamom & pepper
1 cup canned coconut milk
2 tablespoons red pepper
1 tablespoon paprika
1 garlic clove
salt to taste
Brown chicken in butter in a medium saucepan, then add spices and garilc
and stir fry few minutes. Add red pepper and coconut milk. Reduce heat
and simmer til done (2-3 hours, add water if necessary.)
