Rice and Lentils (Diabetic Recipe)
1 cup brown rice, uncooked
4 cups water
1 medium onion, chopped
1/4 teaspoon ground coriander seed
2 cloves of garlic; finely minced
1/4 teaspoon ground black pepper
2 tablespoons vegetable oil
1/4 teaspoon Salt
1 teaspoon Turmeric powder
1/2 teaspoon Paprika
1 c dried lentils, rinsed
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
Saute garlic and onion in the oil in a large saucepan. Add
spices and cook over low heat for 4 minutes. Add lentils and rice and
mix well. Add water. Bring to a boil, turn the heat to the lowest setting
and cook for 45 to 50 minutes, or until the rice and lentils are tender.
